Minty Spiced Chicken
A fragrant Indian-inspired roast chicken rubbed with mint, lime zest, turmeric, coriander, and cardamom. Bright, warm-spiced, and surprisingly easy for a weeknight supper.
Preheat oven to 350Β°.
In small bowl stir together mint, lime zest, sugar, salt, garlic, turmeric, coriander, cardamom and red pepper flakes.
Prick chicken all over with fork.
Brush chicken with lime juice.
Rub mint mixture over all sides of chicken pieces.
Place pieces on rack set in roasting pan.
Roast until juices run clear when pierced with fork, about 1 hour.
Serve hot or let cool in pan on rack 30 minutes.
Wrap and refrigerate until ready to serve.
