Mesfouf
Mesfouf is a North African steamed couscous dish with fluffy grains, golden raisins, butter, cinnamon, and nuts, served lightly sweet for breakfast or celebration tables.

Moisten couscous with salted water and olive oil, rubbing grains apart by hand.
Steam until fluffy, then rake apart and steam a second time for tenderness.

Serve warm in a mound with extra nuts on top.
