Meat Ball Soup
Meat Ball Soup is an moderately easy dinner. Made with 1/2 c. uncooked rice, 1 1/4 lb. lean ground beef, 1 tsp. salt, dash of pepper and 1 (46 oz.) can tomato juice, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Mix rice and ground beef.
Add 1 teaspoon salt and pepper. Form into about 20 meat balls.
In large soup utensil, bring water and tomato juice to a boil.
Add 2 teaspoons salt, celery, onion and raw meat balls.
Boil slowly for 45 minutes to 1 hour.
Add tomatoes (cut up or diced) and bouillon cubes; simmer until hot (do not overcook).
Makes 6 to 8 servings.
