Marinated Mussels(Cozze Di Marinati)
Marinated Mussels(Cozze Di Marinati) is an impressive dinner you can prepare in about 2 hours 24 minutes. Made with (14 oz.) jars mussels (in water), celery, chopped, . onion, minced, garlic, minced and parsley sprig (2 tbsp. minced parsley), this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Drain and rinse mussels.
In saucepan combine celery, 2 tablespoons minced onion, garlic, parsley, 1/2 cup olive oil, vinegar, pepper, salt and onion.
Bring a boil and remove from heat.
Add mussels hot liquid; cool.
Let marinate overnight in refrigerator.
Arrange a small platter with a bed of lettuce, if desired.
Place mussels on platter and sprinkle chopped garlic and sliced onion top.
Pour some the marinade over top of mussels along with the olive oil.
Serve with garlic bread or antipasto platter, if desired. Makes 6 servings.
