Marinated Mussels(Cozze Di Marinati)
Marinated Mussels(Cozze Di Marinati) is an moderately easy dinner. Made with 2 (14 oz.) jars mussels (in water), 1 stalk celery, chopped, 2 tbsp. onion, minced, 1 clove garlic, minced and 1 parsley sprig (2 tbsp. minced parsley), this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Drain and rinse mussels.
In saucepan combine celery, 2 tablespoons minced onion, garlic, parsley, 1/2 cup olive oil, vinegar, pepper, salt and onion.
A boil and remove from heat.
Add mussels liquid;
Let marinate overnight in refrigerator.
Arrange a small platter with a bed of lettuce, if desired.
Place mussels on platter and sprinkle chopped garlic and sliced onion the marinade over top of mussels along with the olive oil.
Serve with garlic bread or antipasto platter, if desired. Makes 6 servings.
