Kathie's Chocolate Eclair Cake
Kathie'S Chocolate Eclair Cake is an impressive dinner. Made with 1 c. flour, 1 stick butter or margarine, 1/4 tsp. salt, 1 c. water and 4 eggs (room temperature), this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Heat oven to 400Β°.
In saucepan, bring water and 1/2 cup butter to a boil until butter is melted. All at once, add flour and salt. Beat until mixture forms a ball and leaves sides of pan. Add eggs, one at a time, beating thoroughly after each addition. Spread mixture into parchment lined jelly roll pan (15 x 10 x 1-inch).
Bake for 35 minutes.
Prick bubbles with fork while hot. Cool completely.
