Jhinge Pabdar Jhol
Jhinge pabdar jhol is a light Bengali pabda fish broth with ridge gourd ribbons. The gourd turns silky in the turmeric-jinger base, making the soup delicate, green, and perfect with rice.

Scrape and cut ridge gourd into long pieces.
Season pabda with turmeric and salt, then sear very briefly.
