Hopping John
Hopping John is an moderately easy dinner. Made with 2 c. dried black-eyed peas, 1/2 lb. salt pork, quartered, 2 c. chopped onions, 1 c. chopped green pepper and 2 1/2 c. water, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Wash peas; place in a Dutch oven.
Cover with water 2 inches above peas.
Let soak 8 hours.
Drain.
Return peas to saucepan. Add salt pork, onions and green pepper.
Cover with water and simmer, covered, 2 hours or until peas are tender and water has cooked very low.
Add 2 1/2 cups of water, rice and seasonings to peas.
Cover and cook over low heat 20 minutes or until rice is done.
Add additional water if necessary.
Yields 8 to 10 servings.
