Hilda's Hot Potato Salad
Hilda'S Hot Potato Salad is an moderately easy dinner. Made with 5 lb. white potatoes, 1 large onion, 5 hard-boiled eggs, 3/4 c. pickles and 4 tbsp. white vinegar, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Cube potatoes and boil 20 minutes. Drain and reserve liquid. To potatoes, add chopped onion, chopped eggs, chopped pickles, cubed butter, vinegar, mustard, salt and pepper. Beat on high until well blended. Salad should be moist and creamy. Add reserved liquid in small amounts if too dry. Taste and amend with a tad more vinegar if needed.
Serves approximately 35 people.
