Herbed Pork Loin
Herbed Pork Loin is an easy dinner. Made with 4 to 5 lb. boneless pork loin, 3 to 4 cloves fresh garlic, 5 to 6 tbsp. dried oregano and salt and pepper, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Peel garlic and cut each clove into 3 or 4 slivers.
Make incisions at random on fat side of loin large enough to insert the cloves of garlic.
Pat dried oregano onto all surfaces and ends of roast.
Place on rack in shallow roasting pan.
Insert meat thermometer into center of roast, being careful not to place point in fat.
Roast at 325° until thermometer reaches 170°.
Remove from oven; allow to rest at least 10 minutes.
Slice and serve garnished with fresh parsley.
Cooking time is approximately 1 to 1 1/4 hours.
