Herbed Fried Parsnips

Pare parsnips, cut lengthwise into 1/8 inch slices.
Cook, covered in small amount of boiling salted water for 12 minutes or until tender. (Lift lid 3 or 4 times during cooking time.) Remove parsnips slices from water.
Dip slices in beaten eggs and then in mixture of bread crumbs, salt and rosemary.
Saute in hot shortening until brown on both sides.
