My father was Puerto Rican and Cuban.
My mother is German and Irish.
When they got married, my mother got my Cuban grandmother's recipe for Spanish rice.
Being a picky eater herself and having 4 kids, my mom distilled the recipe down to a mild version without all the "slimy" things in it that most kids won't eat.
I jokingly call it my mother's Irish Spanish rice!
Each year on Three King's Day (January 6), I bring this rice in for my children's classes.
