Remove from heat.

With wooden spoon, beat in 1 c. flour.

Over low heat, beat mixture until it leaves side of pan and forms a ball-1 to 2 minutes.

Remove from heat.

Add eggs, one at a time, beating with electric mixer or wooden spoon after each addition until well blended; continue beating until dough is shiny and satiny.

Stir in 1/4 c. cheese and the mustard until well blended.
