German Pretzels
German Pretzels are small homemade soft pretzels with a glossy egg-washed crust and coarse salt. The yeast dough is rolled into ropes, twisted by hand, briefly risen, and baked until lightly browned for a snack that is best warm with mustard.
Dissolve the yeast in the warm water.
Stir in the table salt and sugar, then blend in the flour to make a dough.
Knead on a floured board for about 5 minutes, until smooth.
Divide the dough into 4 portions, then cut each portion into 5 pieces.
Roll each piece into a rope and shape it into a pretzel.
Place the pretzels on lightly greased baking sheets, brush with beaten egg, and sprinkle with coarse salt.
Let rise for 20 minutes, then bake at 375 F for about 10 minutes, until lightly browned.
