German Potato Salad
German Potato Salad is an moderately easy dinner. Made with 6 medium boiling potatoes, cooked, drained, cooled, 6 slices bacon, 1 c. sliced celery, 3/4 c. chopped onion and 1 tbsp. flour, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Peel potatoes if desired and slice 1/4 inch thick and set aside.
In a large skillet over medium heat, fry bacon until crisp. Remove with a slotted spoon.
Drain on paper towels.
Discard all but 3 tablespoons of the drippings.
Over medium heat, saute celery and onion in bacon drippings until crispy tender.
Stir in flour, sugar, salt, and pepper until blended.
Stir in water, vinegar, and spicy brown mustard.
Stirring constantly over medium heat, bring to a boil until thickened.
Remove from heat.
Crumble bacon.
Stir potatoes and half of the bacon into hot dressing in skillet. Stirring gently, cook over medium heat until heated through and potatoes are well coated.
Transfer to a serving bowl and sprinkle remaining bacon over top.
Serve hot or warm.
