Fruited Tofu
Fruited Tofu is an moderately easy dinner. Made with 1/4 lb. tofu, drained, 1 medium banana, 1/2 c. pineapple (fresh cut), 1 medium banana, sliced and 1 c. papaya, cubed in 1-inch pieces, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Combine first 3 ingredients in blender or food processor and process smooth for sauce.
Place remaining ingredients in a bowl and toss with tofu sauce.
Serve in sherbet or parfait cups garnished with a piece of the fruit and mint leaves.
