Select young chickens.

Disjoint and cut up as for fricassee. Season with salt and pepper, roll each piece in flour.

Cook in covered skillet slowly in fat for 20 minutes.

Place skillet in oven at 400Β° and cook 10 minutes uncovered; then add boiling water.

Cover and leave in oven another 15 minutes.

Heat may be turned off on oven during last 10 minutes of cooking.

Large covered roaster may be used instead of skillet where several chickens are cooking at one time.
