Fancy Chicken Puff Pie is an impressive dinner. Made with 4 tbsp. butter or margarine, 1/4 c. shallots, 1/4 c. all-purpose flour, 1 c. chicken stock or broth and 1/4 c. sherry, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
In medium saucepan over medium-high heat, melt butter and saute shallots lightly.
Stir in flour until creamy.
Add broth and sherry slowly; heat until boiling and gravy is smooth.
Season to taste with nutmeg, salt and pepper.
Reduce heat to low and simmer 5 minutes.
Stir in ham, chicken, asparagus and cream. Pour chicken mixture into ungreased 9-inch pie plate.
