Eggplant Patties
Eggplant Patties is an moderately easy dinner. Made with 2 lb. eggplant, cubed, 1 tbsp. parsley, 3 to 4 eggs, 1 small clove garlic, minced and 1/4 c. grated cheese, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Place cubed eggplant in saucepan with enough water to cover. Heat until water comes to a boil, then cook 3 to 5 minutes.
Place eggplant in a bowl and add cheese, bread crumbs, parsley, garlic, salt, pepper and eggs.
Blend well.
In a skillet, add the oil and heat. Drop eggplant mixture by spoonful in pan to size of hamburg. Fry on both sides and add more oil as needed.
