Eggplant Casserole
Eggplant Casserole is an moderately easy dinner. Made with 3 large unpeeled eggplant, cut in small cubes, 1 c. chopped onions, 3 garlic pods, chopped, 4 pieces celery, chopped and 1 bell pepper, chopped, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Fry eggplant in olive oil on all sides.
Wilt onion, garlic, celery and bell pepper in olive oil, then add shrimp and fry until it is pink.
Add eggplant which was previously cooked and a cup of water. Cook slowly for about 1/2 hour.
Add bread crumbs and more water, if needed.
Put in casserole dish and top with bread crumbs.
Bake at 350Β° for 1/2 hour.
