Eggplant Casserole
Eggplant Casserole is an moderately easy dinner. Made with 2 medium eggplants, 1/2 lb. ground sausage, 1/2 c. corn flake crumbs, 1/2 lb. ground beef and 1 small onion, chopped, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Pare eggplant; cut in 1-inch cubes.
Cook in boiling water until tender; drain.
Brown the meats together with onion, salt and pepper.
Drain mixture; add eggplant and 1/4 cup corn flake crumbs.
Blend well.
Pour into casserole.
Cover with a layer of grated cheese.
Sprinkle with remaining corn flakes.
Bake at 350Β° for about 10 minutes.
