Dove in Sauce
Dove In Sauce is an moderately easy dinner. Made with 8 doves, cleaned, 2 c. tomato juice, 6 slices bacon, diced, 1 stick butter or margarine and 1 c. diced onion, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Place doves in saucepan with tomato juice; cover and simmer slowly for 30 minutes.
Remove doves; reserve liquid.
Place diced bacon and margarine in flame-proof casserole; heat until hot.
Add onions and saute until golden.
Add birds, garlic, thyme, bay leaf and mushrooms.
Stir to brown, then add tomato juice and cooking liquid.
Cover and simmer slowly until meat is tender, about 1 hour.
Remove birds to a warm serving platter.
Thicken sauce with flour.
Pour over doves and serve.
