Dandelions with Bacon Dressing
Dandelions With Bacon Dressing is an moderately easy dinner. Made with 1 qt. young dandelion stems, 4 slices bacon, 3 tbsp. flour, 1 1/2 c. water and 1 egg, beaten, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Wash and thoroughly drain dandelion stems.
Cut bacon into small pieces and fry until crisp.
Pour off fat, except 2 tablespoons.
Blend flour into these 2 tablespoons fat and gradually add water.
When thoroughly mixed, add beaten egg, salt and vinegar.
Cook over low heat, stirring constantly until thickened.
Pour over dandelions and serve at once.
If desired, dandelions may be cooked slightly and drained well before adding sauce.
