Cucumber Pickles
Cucumber Pickles is an moderately easy dinner. Made with 7 lb. cucumbers, 3 c. lime, 2 gal. water, 5 lb. sugar and 3 pt. white vinegar (5% acidity), this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Cut cucumbers crosswise in even slices.
Soak in lime for 24 hours in 2 gallons of water.
Drain cucumbers.
Wash in clean water.
Soak 4 hours.
Change water every hour for four hours. The last time drain on towel.
Do not drain in silk. Bring to boil sugar, vinegar and pickling spice.
Pour over pickles.
Let set overnight.
Next morning, bring to boil until clear (about 35 minutes).
Put into hot jars and seal.
