Cucumber Lime Pickles
Cucumber Lime Pickles is an moderately easy dinner. Made with 7 lb. cucumbers, sliced crosswise, 2 c. mrs. wages pickling lime, 2 gal. water, 8 c. white vinegar (strength 5% acidity) and 8 c. sugar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Soak clean cucumbers in water and lime mixture in crockery or enamel ware for 12 hours or overnight. (Do not use aluminum ware).
Wash 3 or 4 times in clear water and soak in fresh ice water for 3 hours.
Combine remaining ingredients and bring to a low boil to make syrup.
Stir until sugar is dissolved.
Add cucumbers and soak 5 to 6 hours or overnight.
Boil pickles in soaking liquid for 35 minutes.
Fill jars with cucumber slices and pour syrup over cucumbers leaving 1/8-inch headspace.
Put lids on each filled jar.
Process 5 minutes in boiling water bath method.
Label and store in dry, dark, cool place.
