Cream of Carrot Soup
Cream Of Carrot Soup is an moderately easy dinner. Made with 2 c. peeled sliced carrots, 1 medium onion, chopped, 2 c. boiling water, 1/4 c. flour and 1 tbsp. butter, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
In saucepan, combine carrots with chopped onion and boiling water.
Bring all to boiling and reduce to simmer.
Cover and cook until carrots are tender.
Drain and purΓ©e in blender.
Return pureed mixture to saucepan and stir in flour, butter, salt, pepper and dill weed.
Gradually blend in milk, stirring until smooth. Heat, stirring constantly until soup reaches boiling point.
Serve while hot and add sprinkling of fine parsley.
