Cream of Broccoli Soup
Cream Of Broccoli Soup is an moderately easy dinner. Made with 6 tbsp. unsalted butter, 1 leek, minced, 1 carrot, minced, 2 garlic cloves, minced and 1 head broccoli, cut up into flowerets (i use some of the stalk for this, also), this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Melt butter over medium heat.
Add carrot, leek and garlic; cook until tender, but do not brown.
Add stock; bring to simmer. Add broccoli; cook 8 to 10 minutes, until broccoli is tender. Pour soup into food processor; process until vegetables are finely chopped but not pureed.
Pour back into pot.
Add cream, pepper and celery seed.
