Cold Sweet and Sour Salmon
Cold Sweet And Sour Salmon is an moderately easy dinner. Made with 6 to 8 thick slices fresh salmon, 1/2 stick butter, 1/2 c. raisins, 1/3 c. sugar and 1 tsp. salt and pepper, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Wash and salt the salmon.
Into a pot, place flat on the bottom; pour enough water to cover the slices.
Add the butter, raisins, lemon juice, sugar and salt and pepper to taste.
Bring to a boil.
Lay the fish in the pot and cook slowly until tender, about 10 minutes.
Do not overcook.
Remove the fish carefully and place on a rimmed platter.
Let the liquid cook down a little. Beat the egg yolks.
Add a little of the hot liquid to them and slowly add the eggs to the pot.
Cook a minute until smooth.
Pour over the fish.
Serve cold, garnished with parsley and hard-cooked eggs.
