Chunky Potato Soup
Chunky Potato Soup is an moderately easy dinner. Made with 3 tbsp. margarine, 1/4 c. all-purpose flour, 4 c. milk, 2 c. diced potatoes and 1/2 c. finely minced onion, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Melt butter or margarine in heavy pan.
Add flour to make a light roux, cooking approximately 1 minute (don't overcook). Gradually add milk, stir in potatoes, onion, salt and pepper. Cook over medium heat, stirring frequently (don't let mixture scorch) until mixture is thickened and potatoes are done.
Serve warm.
Makes 5 cups.
Can be doubled.
