Chilled Kona Cucumber Soup
Chilled Kona Cucumber Soup is an moderately easy dinner. Made with 2 large potatoes, peeled and diced, 1 c. chicken stock, 1 c. white wine, 2 cucumbers, chopped and 4 celery stalks, chopped, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Cook the potatoes in the stock and white wine until soft, then add all of the other ingredients, except the heavy cream.
Simmer 5 minutes. Cool.
