Chicken, Sausage And Red Potatoes is an moderately easy dinner. Heat oil and brown sausage and thighs on all sides. Remove meat. Add water and scrape to dislodge brown bits from bottom of pan and return meat, onions, peppers and potatoes. Cook, covered, over low heat until thighs and potatoes are tender, 35 to 40 minutes. Stir occasionally.
When tender, cook, uncovered, stirring occasionally, over medium heat until liquid has evaporated and meat and potatoes are browned.
Serves 4 to 6 people.
