Chicken Piccata
Chicken Piccata is an moderately easy dinner. Made with 1 small garlic clove, minced, 1/2 c. white wine, 4 chicken cutlets, 2 tbsp. butter and flour (enough to coat cutlets), this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Dredge cutlets in flour.
In skillet over medium-high heat, heat oil and butter (or margarine).
Saute chicken until golden brown on both sides.
Add garlic, wine and lemon juice.
Cover; simmer until tender (10 minutes or so).
Remove chicken to plate; keep warm.
Boil sauce in skillet until slightly thick.
Add parsley; stir and spoon over chicken.
