Chicken Croquettes
Chicken Croquettes is an moderately easy dinner. Made with 3 tbsp. butter, 1/4 c. flour, 1/2 c. milk, 1/2 c. chicken broth and 1 tbsp. snipped parsley, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Melt butter and blend in flour; add milk and chicken broth. Cook and stir until thickens.
Cook and stir 1 minute; add snipped parsley, lemon juice, grated onion, salt and dash each of nutmeg and pepper.
Then add chopped, cooked chicken, salt and pepper to taste.
Chill thoroughly.
With wet hands, shape mixture into 8 balls.
Roll in cup of fine crumbs (crackers or dry bread); lightly shape balls into cones, dip in mixture of 1 beaten egg and water and roll in crumbs and fry in deep hot fat for 2 1/2 to 3 minutes. Drain and serve.
