Charlotte is an moderately easy dinner. Made with 1 envelope unflavored gelatin, 1 c. cold water, 1 c. sugar, 1/4 c. lemon juice and 1 c. mandarin juice, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Sprinkle gelatin over 1/4 cup cold water and let soften for 5 minutes.
Mix sugar, 3/4 cup water, lemon juice and mandarin juice together in a pan, add gelatin and heat, stirring until gelatin dissolves.
Chill until just barely thick, beat until frothy.
Beat egg whites stiff, but not dry, and fold into gelatin mixture.
Whip the cream to soft peaks and fold in.
Line a 2-quart mold with drained mandarin sections, spoon in the Charlotte and chill. Unmold before serving.
Serves 8 to 10.
