Caribbean Ratatouille
Caribbean Ratatouille is an moderately easy dinner. Made with 2 tbsp. olive oil, 2 medium-size onions, coarsely chopped, 1 clove garlic, minced, 1/4 lb. okra, cut into rounds and 1 large unpeeled eggplant, cubed, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
In large saucepan, heat oil.
Saute onions and garlic until soft (about 5 minutes).
Stir in remaining ingredients.
Reduce heat to low, cover saucepan and simmer, stirring occasionally until vegetables are tender (about 30 minutes).
Add additional seasonings to taste.
Serves 6 to 8.
