Buttermilk Spice Cake
Buttermilk Spice Cake is an impressive dinner. Made with 1 c. buttermilk (not sour milk), 2 tbsp. hot tap water, 1/2 c. diced, candied orange rind or 1 c. diced dates, 1 c. raisins (optional) and 2 c. unbleached flour (sifted before measuring), this recipe delivers authentic, satisfying flavors. Pour buttermilk and hot water over orange rind or dates and raisins if used; let stand while assembling other ingredients. Sift together flour, salt, baking soda and spices.
Cream butter and sugar until light and fluffy; add eggs, one at a time, beating well after each addition.
Add dry ingredients alternately with buttermilk mixture, beating until smooth after each addition.
Turn batter into greased and lightly floured 9 x 9-inch pan.
Bake in preheated 350Β° oven about 45 minutes or until a wooden pick inserted in center comes out clean.
Cool slightly; while still warm, spoon Broiled-On Frosting on top.
Place under broiler until frosting bubbles and browns lightly.
