Burnt Sugar Cake
Burnt Sugar Cake is an moderately easy dinner. Made with 1 c. sugar, 1 c. boiling water, 2 1/4 c. sifted cake flour, 1 c. sugar and 3 tsp. baking powder, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

To make syrup
In a heavy skillet, melt the first cup of sugar over low heat until clear and medium brown, stirring constantly.
Remove from heat; slowly add boiling water, stirring constantly.
Stir over low heat until caramelized sugar dissolves. Measure 1/2 cup syrup and set aside for icing.
Add water to remaining syrup to make 1 cup of liquid.
Sift dry ingredients into bowl, add shortening and 2/3 cup cooled syrup. Beat 2 minutes.
Add remaining 1/3 cup syrup, eggs and vanilla. Beat 2 minutes more.
Pour batter into 2 greased and floured 8-inch round pans and bake at 350Β° for 30 to 35 minutes.
Cool 5 minutes and remove from pans.
