Black Beans and Rice
Black Beans And Rice is an moderately easy dinner. Made with 1 lb. black beans, 1 c. chopped onion, 1 green pepper, chopped, 1 garlic clove, chopped and 4 c. cooked rice, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Wash black beans in accordance with package instructions. Boil beans in 6 cups water.
Saute chopped onion, green pepper and garlic in olive oil for 5 minutes or until softened.
Add sauteed mixture to beans with salt, black pepper and ham bone. Cover and simmer until beans are soft, adding more water as needed.
Serve over rice.
Garnish with green onion and vinegar (to taste).
