Becky's Divinity
Becky'S Divinity is an moderately easy dinner. Made with 2 1/2 c. sugar, 2 egg whites, 1/2 c. light corn syrup, 1 tsp. vanilla and 1/2 c. water, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

In 2-quart saucepan, combine sugar, corn syrup, water and salt. Cook, stirring, until mixture boils.
Cook over medium heat to 260° without stirring.
As temperature nears 250°, beat egg whites to stiff peaks in large mixing bowl.
Gradually pour hot syrup in a thin stream over egg whites, beating at high speed of electric mixer.
Add vanilla.
Beat 4 to 5 minutes more or until mixture holds shape.
Drop from a teaspoon onto wax paper or spread in a buttered 10 x 6 x 2-inch pan.
Cool and cut.
