Melt butter in a Dutch oven and saute onions and garlic until onions translucent and soft.
Add potato slices; cover and simmer, stirring often until potatoes are almost tender, about 20 minutes.
If necessary, add more butter.
Add tomatoes, carrots, celery, salt and pepper; cover and continue cooking on low heat until carrots are tender, about 20 minutes.
