Baccala(Codfish)
Baccala(Codfish) is an moderately easy dinner. Made with 2 lb. frozen cod fillets, 1/2 lb. butter, 1/2 c. oil, 1/3 c. onion, chopped and 1 clove garlic, chopped, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
In a large 3-quart heavy saucepan, place butter and oil.
Heat until butter melts.
Add remaining ingredients except codfish. Bring to boil.
Reduce heat and add fish, partially thawed and cut into 1 to 1 1/2-inch cubes.
Bring to boil; reduce heat and simmer 1 1/2 to 2 hours, stirring occasionally.
Serve over hot polenta or potatoes.
