Aunt Bill's Candy
Aunt Bill'S Candy is an moderately easy dinner. Made with 6 c. sugar, 2 c. cream or evaporated milk, 1 tbsp. white corn syrup, 1/2 c. butter and 1/4 tsp. soda, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Caramelize 2 cups sugar by melting in heavy skillet. While sugar is caramelizing, combine and bring to a boil in large saucepan, 4 cups sugar and corn syrup.
Pour caramelized sugar slowly into boiling mixture, stirring constantly.
Cook to 245Β° on candy thermometer, stirring frequently.
Remove from fire and immediately add soda, stirring vigorously as it foams up. Add butter and stir only until it is melted. Cool 20 minutes. Add vanilla and beat until thick and creamy. Add pecans.
Pour in buttered pan. Cool.
Cut into small squares.
