Arroz Rojo(Red Rice)
Arroz Rojo(Red Rice) is an moderately easy dinner. Made with 1 1/2 c. long grain rice, 1 garlic clove, 3/4 tsp. salt, 3 tbsp. vegetable oil and 1/2 medium onion, finely chopped, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Rinse rice.
Mash garlic with salt to make a paste.
Heat oil in a large pot or Dutch oven.
Add rice; cook and stir over medium heat until lightly browned.
Add onion and garlic paste; cook and stir until onion is tender.
Stir in tomato sauce and chicken broth.
Cover and simmer until most of the liquid has been absorbed.
Reduce heat to very low; steam for 30 to 45 minutes, until rice is tender.
