Zucchini Stuffed with Cheese and Onion

Preheat oven to 375Β°.
Wash zucchini, then cut in half lengthwise.
Heat 1/2-inch water in large saucepan.
When it boils, add zucchini halves and simmer for about 3 minutes, just to soften them; then drain well.
Using a teaspoon, scoop out center of zucchini to leave a cavity for stuffing.
Chop up scooped-out zucchini.
Melt butter in saucepan and saute onion for 5 minutes, then add garlic and chopped zucchini.
Cook 5 minutes.
Remove saucepan from heat and stir in cheese, thyme and salt and pepper to taste.
Fill zucchini shells and bake in greased pan for 20 to 30 minutes.
Can be served with fresh tomato sauce.
