Zucchini Relish
Zucchini Relish is an moderately easy dinner. Made with 10 c. zucchini (about 5 lb.), 4 large onions, 4 large green peppers, 4 large red peppers and 1/2 c. salt, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Grind zucchini, onions and peppers in food grinder or processor until medium coarse.
Sprinkle with 1/2 cup salt and let stand overnight.
Drain and rinse well in cold water.
Mix vinegar, sugar, cornstarch and spices.
Bring to a boil in a large kettle.
Add ground vegetables, then simmer 30 minutes.
Ladle into hot jars, leaving 1/2-inch at top.
Process in boiling water for 15 minutes.
Makes 7 pints.
