9-inch skillet, cook onion, zucchini and peppers in little oil.
Salt and pepper to taste. In whisk together eggs, 1/3 cup
Parmesan and parsley.
Add vegetables to mixture. In the skillet, heat remaining oil.
Pour in egg mixture, distributing vegetables evenly,
