Yankee Pot Roast
Yankee Pot Roast is an impressive dinner. Made with 1/8 lb. salt pork (diced), 4 lb. chuck roast, 1 bay leaf, 2 cloves garlic and 2 tsp. whole thyme leaves, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Heat a large Dutch oven and brown salt pork - leave fat in the pan.
Salt and pepper roast and brown in fat - both sides (do not puncture meat).
Add 2 cups of water, bay leaf, garlic, thyme and parsley.
Cover - simmer slowly 2 hours - Keep at least 1 cup of water.
Add carrots, onion and turnip.
Cover and cook 1/2 hr. Then add potatoes and cook until potatoes are done.
Watch water (don't let pan get dry).
Take out meat and vegetables.
Add small amount of water if needed.
For roux melt butter, add flour in the pan and mix to desired thickness for gravy.
