Preheat the oven to 400°.

Lightly grease a 1-quart soufflé dish.

Place the yams in a large pot, cover with water and bring to a boil.

Cook until tender, 20 to 30 minutes, drain and set aside to cool.

Peel the yams.

In a bowl, mash the yams.

Add 1 teaspoon sugar, the egg yolks, 2 tablespoons butter, cinnamon, nutmeg, salt and milk; beat well.

Whisk egg whites until peaks form.

Fold into mixture.

Pour the yam mixture into the prepared soufflé dish.

Dot the top with the remaining butter and sprinkle with sugar.

Bake until golden brown.
