Oil a platter with vegetable oil.

Place the sugar, vinegar and butter in a deep saucepan.

Stir over low heat until the sugar is dissolved.

Increase heat slightly and cook without stirring, until a candy thermometer registers 268Β° or until a small quantity of the syrup will form a hard ball when dropped into a bowl of cold water. Remove pan from stove and add vanilla.

Stir only enough to blend mixture.

Pour candy onto platter.

Let cool until a dent can be made in it when pressed with finger.

Gather into a lump and pull it with finger tips until is light and porous.

Dip hands in cold water often to prevent sticking.

Roll into long thin strips and cut in 1-inch pieces.

Place in tight tin can if you want creamy.
