Soak beans about 4 hours or overnight.

Drain and cover with water; bring to a boil, then simmer about 30 minutes.

While beans are simmering, cut ham from bone, chop onion and brown together in oil (slowly).

When brown, add 2 cups water and cut green onions. Simmer.

After beans have simmered for 30 minutes, drain; then add the onion and ham mixture.

Add enough water to cover; salt and add peppers and Tabasco sauce.

Cook slowly until done, about 1 hour.

The ham bone may be added with the beans when the seasoning is added.
